Quesadilla

4 quesadillas for 4 people.

Ingredients

- 1 tomato
- 1.5 onion
- 3 cloves of garlic
- 2tbsp Lime juice
- 3 green chillis
- 250g mushroom
- 300g corn
- 8 tortillas
- 2tbsp chaat masala
- 1tbsp red chilli powder
- 2tbsp pepper
- A little more of each of the powders on hand
- 4 tbsp oil
- 300g cheese speead
- 250g mozzarella cheese
- Sour cream + guacamole + salsa

Other Requirements

- Sauce pan/tava + Spatula
- Microwave

Steps to Prepare

1. Saute the Vegetables

  1. Chop the vegetables into small pieces, and open cans of other vegetables.

  2. Add 4 tbsp of oil to a tava/sauce pan and add the veggies (garlic, onions, green chillis, tomatos in that order).
  3. Add 4 tbsp of oil to a tava/sauce pan and add the veggies (garlic, onions, green chillis, tomatos in that order).
  4. Add the required volumes of chaat masala, pepper, red chilli powder and some salt to taste and continue sauteing.
  5. Add corn and mushroom to the dish (after draining all water from the cans).

  6. Once cooked till dry, put the vegetables away.

2. Assemble the Quesadilla

  1. Apply cheese spread and spread uniformly on one side each of 8 tortillas. The cheese spread should reach upto the edge of each tortilla.
  2. Take 0.25 of the sauted vegetables and distribute across 1 tortilla. Make sure not to go all the way up to the edge, but to leave some room.

  3. Now add some shredded mozarella cheese on top of the veggies. And season lightly with some additional powders (chaat masala, pepper and red chilli powder).

  4. Now take another tortilla (with cheese spread) and close the quesadilla. Press the edges into each other and try to close them. If the tortillas don't merge into each other, a little bit of cheese can be used at the edge to ensure that it binds when it melts.

  5. Cut the quesadilla into 4 quadrants.
  6. Repeat the above process for the remaining 3 quesadillas.
  7. Place each of the quesadilla one by one in the microwave for 2 minutes. Through the cuts (into 4 quadrants) check to make sure that the cheese inside has melted well.
  8. Serve with sour cream (highly recommended), salsa and guacamole.



Best served with a mexican starter like nachos.
